Homemade Coconut Bread Recipe

Both the dough and topping of this homemade coconut bread are easy to make and can be prepared in parallel - optimizing time in the kitchen is everything, isn't it? This homemade sweet bread has a little extra flavor: fennel seeds. It is optional, but the fennel adds a special touch to the recipe.

Ingredients for making homemade coconut bread:
500 grams of wheat flour
10 grams of dry biological yeast
100 grams of sugar
120 milliliters of whole milk
1 teaspoon of salt
3 eggs
4 tablespoons of melted unsalted butter
½ teaspoon fennel seeds (optional)
Coconut topping:
½ can of condensed milk
200 milliliters of coconut milk
grated coconut to taste to finish
How to make homemade coconut bread:
Separate the ingredients. Eggs should be at room temperature and butter melted.
Mix yeast, sugar, milk, salt, eggs, 2 tablespoons butter and fennel seeds in a bowl.
Add wheat flour gradually and mix.
Tip: Sift the flour to avoid lumps in the dough.
When the coconut bread dough reaches the consistency of the photo, it's time to get down to business!
Put a little flour on the counter, continue adding the rest of the flour and start kneading the dough until it is smooth and sticking lightly in your hands (about 15 minutes).
Put the dough back in the bowl, cover it with a cloth and let it rest until it doubles in volume in an enclosed place (this can be the oven or microwave turned off). This will take around 1:30 am.
Meanwhile, let's prepare the coconut frosting and condensed milk.
Reserve the grated coconut. Mix the condensed milk and coconut milk in a small saucepan and cook on low heat for approximately 5 minutes to reduce. Always stir! Allow to cool while you finish preparing the rolls.
After resting, place the dough on the lightly floured countertop and remove excess air.
Divide the dough into equal parts - here yielded 20 rolls of about 40g each.
Tip: Preheat the oven to 180ºC.
Grease a pan with a little butter and place the buns. Cover again and let rise until the balls double in volume. Then brush what is left of the melted butter on the surface of the buns and bake in a preheated oven at 180ºC for 30 minutes or until golden.
After baking, the coconut buns will look like this!
Once the breads are ready, remove from the oven and pour in the coconut cream + condensed milk.
And then sprinkle the grated coconut.
After putting on this topping, your super creamy and fluffy homemade coconut buns are finally done!
